A four day pasta making gastronomical adventure in beautiful Tuscany.


Prepare to craft artisan pasta and cook risotto like a pro by the end of your four-day cooking retreat whilst also learning how sustainable food and drink production works in harmony with the local environment.

Set against the backdrop of lush olive groves under the Tuscan sun, your intimate fresh pasta-making lessons and risotto cooking classes led by experienced, artisanal chef, Oli, are interspersed with trips to producers for a holistic, gastronomic experience that will immerse you in Italian culture.

Wake up in authentic Terracotta apartments with a view over the glistening pool and the verdant countryside of Roccatederighi, before learning all there is to know about pasta making from the masters.

What's Included:


Poolside apartments on the doorstep of the beautiful medieval village of Roccatederighi.


Located in the beautiful village of Roccatederighi in the South of Tuscany, Residencio Il Ciliegio provides the perfect Italian retreat above the olive groves.

Lounge by the pool and soak up the Tuscan rays as you look out over the lush countryside to the picturesque vineyards below or eat breakfast al fresco in the garden.

Furnished in a traditional Tuscan style, these terracotta apartments combine rustic elements like exposed brick with all the contemporary comforts of home.

The Plan

Wake up to a hearty breakfast before flexing your artisanal fingers and learning to craft fresh pasta and to make delicious sauces before devouring your handy work. Visit local producers and spend your evenings drinking aperitifs and crafting dinners from your very own hand. Please note that itineraries are subject to change due to weather, availability etc.

Day 1


Check in to your apartment and get to know the team and your surroundings.


Get to grips with gnocchi in your first masterclass


Join the guided wine tasting and aperitivo at local vineyard with panoramic views


Dine al fresco under the pergola on an indulgent four course feast, including the gnocchi you made earlier, and a number of other local dishes prepared by your private chef.

Day 2


Visit a local buffalo mozzarella farm, starting the day off with a buffalo milk cappuccino before taking a tour and tasting with the producers there.


Head to the seaside for an organic Tuscan rice farm tour.


Aperitivo and risotto masterclass using the rice picked up from earlier


Enjoy the fruits of your labour at dinner when you eat the risotto you have made out in the square of our medieval village. Your private chef has also thrown in a couple of extra gastronomic treats.

Day 3


Practice your hand at twirling pasta shapes in this workshop and learning to make tagliatelle and farfalle.


Toast your handy work with a well-earned lunch consisting of local delicacies and your handmade pasta.


Be guided through a sustainable olive farm and experience the rustic taste this farm has to offer.


Expand your waistband for a five course traditional dinner at a local family's organic vineyard, with wine pairings to every course.

Day 4


Learn to make filled pasta in this workshop including tortelli, ravioli, and 'plin'.


Enjoy a final farewell lunch, dining on the filled pasta you made over the course of the morning.


Wave goodbye to your Tuscan surrounds and prepare to leave with all the new culinary skills you have mastered.
