Video Recipe: Pasta with Mussels

This pasta and mussel sauce dish will transport you to a summer's day on the Amalfi coast! We have an Instagram video to go with the recipe too, you'll find the video below.


Most fishmongers and some supermarket fish counters in the UK will have mussels for sale, but I think a lot of people aren't sure how to clean them and prepare them. There aren't many more delicious things out there so if you're not confident prepping mussels, watch our guide and try our recipe immediately! Once again, we're keeping things fairly simple with a short list of ingredients. Good ripe and juicy tomatoes are a must though.

Sugo di Cozze


Mussel sauce


Serves 4


4 tbsp extra virgin olive oil


Good glug of white wine


Pinch of dried chilli flakes


3 cloves garlic, thinly sliced


1kg fresh mussels


500g fresh, ripe tomatoes, chopped


Large handful fresh chopped parsley


1 De-beard the mussels and scrape any excess dirt off the shells. Discard any that are broken, or that don’t close when given a few hard taps. Refrigerate in a bowl under a damp bit of kitchen towel.

2 Put the garlic, chilli and oil in a deep pan and fry for a few minutes until the garlic starts to brown. Add the white wine and the mussels. Crank up the heat and cover tightly.Check after a few minutes - the mussels are ready when they have just fully opened. Turn off the heat and pour the liquid that has collected at the bottom of the pan into a bowl through a sieve. This liquid is juices released by the mussels and is pure deliciousness!

3 Remove around half of the mussels from their shells, discarding the shells. Keep the other half in their shells. Set aside.

4 In a large frying pan, heat the mussel liquid over a high heat so it reduces by around a third. This will take around 5-10 mins.  Throw in the tomatoes and simmer for another 5-10 mins until the tomatoes have broken down a little and created a thick sauce. If it's still very watery, continue to cook a little until thicker.

5 Add the parsley and the cooked mussels to the sauce and mix over a medium heat. When your pasta is cooked, transfer it over into the sauce; mix well and serve!
